- 4 large organic oranges (thin-skinned varieties work best)

- Wash & slice.
Thoroughly wash your oranges and lemon. Slice them very thinly — peel and all — removing any seeds. - Soften the fruit.
Place slices in a saucepan with the water. Bring to a gentle boil, then simmer uncovered for about 30–40 minutes, until the peels are tender and the kitchen smells like sunshine. - Sweeten & simmer.
Add the sugar (start with 1½ cups) and stir until dissolved. Continue to simmer gently for another 30–45 minutes, stirring occasionally. The mixture will thicken and deepen in color. - Optional healthy twist.
If using chia seeds, stir them in during the last 5 minutes for natural thickening and added nutrition. - Test & jar.
To test readiness, place a drop on a chilled plate — if it wrinkles slightly when you nudge it, it’s set. Pour into sterilized glass jars, seal, and let cool completely. - Storage.
Store in the refrigerator up to 4 weeks, or process in a water bath for longer shelf life.
